CIRCULARWAYS AND SURPLUSTABLE ARE BACK IN THE FIELD IN LOFOTEN

A key goal of the Surplustable concept is to find local partners who believe in the idea and want to continue it in a locally adapted form, based on the needs and possibilities of the place they live.

This time, we hosted Surplustables at Napp Community House together with students from the restaurant and culinary arts program in Leknes. The students helped collect surplus food from two local grocery stores, processed the ingredients, and received training on food waste and how surplus food can be transformed into new recipes.

The result was a delicious dinner for participants from Hybridforum and Utopia Workshop, as well as for young participants at the Lofoten Conference. The conference was arranged by our partner The Green Islands, where we also introduced the idea of Convivium and held a workshop on food culture and preparedness.

We also had the chance to see how great the old prison has become after renovation, including redesign and the purchase of new kitchen equipment.

More Surplustables are planned here in 2026, in collaboration with the NGO Framtiden i våre hender.
